Beef Morcon


  • 1 kilo beef round, sliced thinly and pounded
  • 1 pack 7g Aji-GInisa® Flavor Seasoning Mix


  • 250 grams beef liver, finely chopped
  • 250 grams ground pork
  • 3 pieces hard-boiled egg, sliced
  • 6 pieces regular hotdog/chorizo de bilbao, cut into strips
  • 250 grams pork back fat, cut into strips
  • ½ cup cheddar cheese strips
  • 6 sprigs fresh rosemary
  • 6 pieces bay leaf
  • 2 tablespoons oil for searing


  • 1 cup diced carrots
  • ½ cup sliced celery
  • 1 cup tomato sauce
  • 3 cups water or beef stock
  • 1 cup sliced red bell pepper
  • 1 pack 7g Aji-GInisa® Flavor Seasoning Mix
  • 3 meters kitchen twine/thread (for tying)


  • 1 tablespoons finely chopped parsley
  • 2 tablespoons grated cheddar cheese


  • SEASON. Rub each sliced beef with Ajinomoto® brand Ginisa Flavor Seasoning Mix.
  • STUFF. Arrange the fillings on each sliced beef:beef liver, ground pork, sliced eggs and strips of hotdog, cheese and pork porkfat,
  • ROLL. Roll the sliced beef with all the filling inside and secure with a kitchen twine or thread Fasten each roll with a sprig of rosemary and bay leaf.
  • SEAR. Heat oil in a pan and sear each beef roll.
  • BOIL. On a pot, combine water or beef stock, carrots, celery and bell pepper. Boil then add tomato sauce.
  • SEASON. Sprinkle Ajinomoto® brand Ginisa Flavor Seasoning Mix. Mix well
  • SIMMER. Add the seared beef rolls in the pot and simmer for 30 minutes or until meat is tender.
  • SERVE. Sliced each roll diagonally. Pour sauce and topped with chopped parsley and grated cheese.

Variety of ingredients gives variety of nutrients. Egg yolk, liver and carrots are excellent sources of vitamin A while bell pepper is a good source of vitamin C. Meats like beef are excellent source of protein and Vitamin B 12.

Slicing the beef rolls while it’s too hot will cause it to break apart. So wait and let it set before slicing.
