It’s summer time! Probably most of us are missing one thing this season… the beach. Going on a summer beach getaway is something we look forward to do after the pandemic ends. But have you ever thought of why many Filipinos love summer outings? Yes, salu-salo! Deliciously prepared food to share with everyone completes the day. Certainly, Filipinos will never forget bringing the ultimate beach handa. Let’s go back to the years when we were still all allowed to go out and reminisce few of our list in our beach handa. These are inihaw na barbecue, liempo, seafood, adobo, spaghetti, pansit, steamed rice, salads, fresh fruits, cold drinks, and many more.

However, as the others enjoy splashing around the beach and exert too much energy in their activities, they lose a lot of nutrients and water. We must check if the food we prepared will boost their energy, hydration, and of course, their immunity. It is important to boost their immunity because several bacteria, viruses, and microorganisms thrive at the sea that can get into their bodies. Definitely, we do not want them getting sick after a day at the beach.

Ensaladas or salads, are proven to be a star in beach salu-salos. Not only it refreshes us and balances the meat dishes, but it also provides us a lot of vitamins and minerals to enhance our immunity. Common ingredients used for ensaladas are green and ripe mangoes, tomatoes, onions, cucumber, turnips, and lettuce. These are rich in immunity-boosting vitamins that help in fighting off diseases.

While waiting for the pandemic to end, try this new summer dish at home, Grilled Pompano with Ensaladang Lato. Aside from grilling your usual meats and fish, try pompano or other kinds of saltwater fish you can find at the market. Pompano is rich in selenium, an essential component of various enzymes and proteins that help to protect against cell damage and infections. Lato (or sea grapes) is a seaweed rich in iron which helps maintain healthy body stamina and helps in the proliferation of immune cells in our bodies. It also has a high water content that could contribute to hydration.

To make this dish, create incisions on both sides of the cleaned fish then rub it with oil and AJI-GINISA® Flavor Seasoning Mix to add meaty deliciousness to your fish. Set aside for at least 20 minutes. In a hot lightly greased griller, cook the pompano for 7-10 minutes or until cooked through and slightly charred. To make the ensalada, cut lato into pieces using kitchen sears. In a bowl, toss lato, red onion, tomato, and salted egg. Mix vinegar, white sugar, and ground pepper to make the dressing. Drizzle onto the vegetables. Mix soy sauce and calamansi juice in a saucer. Ensure to add the dressing onto the salad just before serving to avoid wilting.
