AJINOMOTO® BRAND GINISA FLAVOR SEASONING MIX

Ingredients

For the Filling:
3 Tablespoons (24 ml) Cooking Oil
1 Tablespoon (10 grams) Garlic, minced
100 grams Pork, sliced
100 grams Shrimps, shelled and chopped
500 grams Ubod, shredded
2 Tablespoons (20 grams) Soy sauce
1 pack (7 g) AJI-GINISA® FLAVOR SEASONING MIX

For the Lumpia Wrapper:
2 pieces (114 grams) Chicken egg, beatedn
2 Tablespoons (24 grams) Cooking Oil
1 cup (90 grams) Cornstarch
1 1/2 cup (m375 ml) Water
1 pack (7 g) AJI-GINISA® FLAVOR SEASONING MIX

For the Lumpia Sauce:
1/2 cup (81 grams) Sugar
1 1/2 cup (375 ml) Pork Broth
1 1/2 Tablespoons (20 ml) Soy Sauce
1 1/2 Tablespoons (9 grams) Cornstarch
1 pack (7 g) AJI-GINISA® FLAVOR SEASONING MIX
6 pieces (66 grams) Romaine Lettuce
1/2 cup (70 grams) Peanuts, toasted and chopped
6 teaspoons (20 grams) Garlic, minced

Preparation

Preparation and Cooking Time: 1 hour Makes: 6 servings
Serving size: 1 roll (50 grams wrapper, 11 grams lettuce, 90 grams ubod filling)

Procedure

For the Filling:
WASH AND BOIL. Wash and boil ubod until slightly tender. Set Aside.
BOIL. Boil pork in 2 cups of water. Strain the pork. Set aside the pork broth and meat.
SAUTE. Heat oil in a pan and saute garlic, pork, shrimp, ubod and season with soysauce and AJI-GINISA® FLAVOR SEASONING MIX.Cook until ubod is tender. Let cool and set aside.

For the Lumpia Wrapper:
BEAT eggs until thick.
MIX. Add oil, cornstarch, and water. Blend well until all lumps disappear. Season with AJI-GINISA® FLAVOR SEASONING MIX.
COOK. In a hot pan, pour 1/2 cup (76 g) of batter. Continuously tilt the pan to evenly spread the batter. Cook until the wrapper can be easily lifted. Let cool and set aside.

For the Lumpia Sauce:
CARAMELIZE sugar in frying pan.
MIX and SIMMER. In a pan, combine broth, soy sauce, cornstarch and AJI-GINISA® FLAVOR SEASONING MIX. Simmer into a smooth paste. Pour the broth mixture to the caramelized sugar and stir until desired thick consistency.

Assemble:
WRAP ubod mixture in lumpia wrapper with a piece of lettuce inside. Pour a generous amount of sauce on top of the lumpia. Top with chopped peanuts and/or minced garlic. Serve.
